Full description
"Ham and old wine stretch the skin", as the saying goes. So this proposal is almost like going to a beauty salon, but much more pleasurable for your palate.
On this 2.5-hour guided tour you can stroll through the pastureland among purebred pigs to learn about their habitat and diet, as well as discover the manual and natural processes of salting, seasoning and drying Iberian products . All in the incomparable setting of Sierra de Aracena y Picos de Aroche Natural Park.
To conclude, a full tasting of Iberian ham and loin paired with the best wines of the area.
What we will do
We will meet at 11 a.m . at the Iberian ham production factory in Corteconcepción, where we will be welcomed by an expert guide.
In the first part of the experience we will visit the dehesas, located in the Natural Park of Sierra de Aracena and Picos de Aroche. For 50 minutes we will be in direct contact with purebred Iberian pigs, we will learn about their genetic characteristics, their diet and the environment in which they grow. In fact, one of the first requirements to be met for the traceability of the Jabugo Denomination of Origin is that they must be free-range.
The second phase will be devoted to learning how Iberian products, one of the country's gastronomic jewels, are made. To do this, we will visit the drying room and the cellars, letting the aromas that emanate during the salting and curing phases surround us. The guide will explain the main differences between an artisanal and an industrial process.
The last phase of the visit will be the most awaited: the tasting of Iberian products with food and wine pairing. We will start with two types of hams cut by knife on the spot, a 50% Iberian cebo ham and a 100% D.O. Jabugo acorn-fed Iberian ham. Both accompanied by two wines D.O. Condado de Huelva. To finish, we will enjoy tasting 100% Iberian loin of pork and Iberian loin of acorn-fed acorn-fed acorn-fed iberian pork paired with an original sweet orange wine.
In total, this activity will last from 2.5 to 3 hours.
